CHARACTERISTICE OF PRODUCT:
This is Honjozo Sake, but this is also in type of "SHIZUKU/Drop" Sake. This type of sake is not pasteurized in the normal manner, but rather through pressing the Sake through a fine filter cloth. Using local special selected brewing rice, “IWAI” and underground spring water, “SHIRAGIKUSUI” which was voted as 1st selected pure water in Japan, we made smooth & well balanced Junmai shu. The Junmai-Shu is usually made from polished to 70% rice, however, this “OTAKA” made from highly polished to 60% (same with Ginjo-shu) smooth texture with well balanced Junmai-shu. “KOTO NO AWAYUKI” means “Light snow in a Historical-Town”. It is from the Four Seasons series one of SAITO Brewery’s main Sake product line. “KOTO NO AWAYUKI” is made with special selected brewing rice that has been milled so that no more than 57% of its original size remains. Its brewing method is very labor intensive, fermented at colder temperatures for a longer period of time and adding small amount of brewers alcohol. This super premium sake has a light, incredibly smooth, yet almost fruity taste that your palate will find truly exceptional.
